Makes 10:
5 large eggs
5 rashers streaky smoked bacon
1/2 avocado, chopped
80g mature cheddar cheese, grated
Sea salt & black pepper

1. Preheat the oven to 160°C and grease a muffin tin or fill with silicone muffin cases.
2. Grill or fry the bacon until crispy then cut into small pieces.
3. Crack the eggs into a large bowl and add the chopped bacon, avocado, cheddar and a pinch of salt and pepper.
4. Whisk to combine the ingredients.
5. Pour into the prepared tin or cases and place in the centre of the oven for 18-20 minutes.
